Why would he answer my text like this?

I don’t see anything wrong with a coffee date for a 1st date, especially if the guy is a total stranger (which he’s not, in this case). My first date with my boyfriend (who I met online) was a coffee date. We clicked immediately and talked for 2 hours. If the guy is a total stranger I consider the first meeting a screener, to see if he’s someone I’d even want to have dinner or drinks with. I had some very awkward 1st dates where I could immediately tell there was no chemistry at all, and was grateful that we’d only agreed to coffee, so I could be out of there in less than an hour, with minimal expense.

In your case, you know this guy since he’s your neighbor. You say he’s your “crush”, but you don’t like his nose piercing and you blow him off when he asks you out? That makes no sense. I agree with what’s been said about you playing games. You’re texting and playing with this guy but then shooting him down when he asks you out. Most women would be very happy to have their “crush” ask them on a coffee date! Or, as has already been said, if you like him why not tell him you don’t do coffee but prefer to go for dinner/drinks/a movie/whatever. Be responsive and open to him instead of just shutting him down.

You do sound immature and clueless, though, as Kaye has said. You’re overly focused on his response to your strange text instead of examining how your own inconsistent behavior is contributing to the situation.
